Gas stoves with convection - what you need to know about them

A gas stove with convection is already commonplace. The convection version is gaining more and more popularity because it makes any dish even tastier.

Convection is a type of oven operation in which hot air circulates throughout the entire volume of the oven. The air moves through it under the influence of a special fan, which is mounted on the back wall. This mode allows you to create excellent baked goods, meat dishes and dry mushrooms or crackers.

Features of gas models with convection

As already noted, the key element here is the fan. It is quite simple in design. Although recently more and more modifications with a more powerful version of the fan have appeared. An additional heating component is installed in its surroundings.

Strengthened options are also used. They create a rapid hot air flow. Thanks to this effect, a dried layer appears on the prepared product. It prevents the juice from evaporating during the baking process.

All these options were previously present only in electric convection models. But in recent years, gas stoves with convection ovens (CD) have also begun to have these capabilities. The combination of a fan and heating components created a solid range of variations in the heat treatment of products.

Multifunctional CDs operate in 1-8 modes.

  1. Defrosting semi-finished products at room temperature.
  2. Defrosting the same products using warm air. The oven has a heating component and a fan. Mushrooms, fruits and vegetables are dried in the same mode.
  3. Standard cooking. Heaters are activated from below and from above. This mode bakes pies, pizza and cottage cheese.
  4. Express cooking. The same components work as in step 3 + fan. Casseroles, roasts, and fruit pies are being prepared.
  5. Express cooking at different levels. They operate: a fan and a heating element mounted around its circumference.
  6. Browning various baked goods and dishes. The grill works from above.
  7. Grill. Thin pieces of meat, fish and vegetables, sandwiches and casseroles are prepared.
  8. Grill + convection. Participants in the process: fan and grill. This mode creates an appetizing crispy crust. Kebabs, whole poultry and massive pieces of meat are being prepared.

Powerful modern versions have moist convection. She introduces another mode - steaming. In this mode, dishes do not lose their aroma, taste and set of vitamins at all. Excellent dough germination is ensured at the start of the cooking process. The baked goods do not dry out during further cooking.

Which temperature mode to choose for cooking?

To prepare various dishes, it is important to observe temperature conditions, which can be monitored with a thermometer on the stove. To do this, use our table:

DishTemperature range
Vegetable stew, steaks or frying cutlets190-230 degrees
Fried potatoes130-190 degrees
Stewed meat with vegetablesup to 130 degrees
Baking pies200-220 degrees
Boil in water or milk95-98 degrees

Advantages of slabs with CD

  1. Simultaneous preparation of several dishes. This uses several levels. All kinds of burning and raw food are excluded.
  2. The oven reaches the desired temperatures faster. The cooking process time is reduced. Gas is consumed more economically.
  3. Any dish is baked evenly and on all sides.
  4. You don't need to use a lot of oil for the process.
  5. Eliminates odor from the oven.
  6. Semi-finished products are defrosted at high speed.
  7. Mushrooms, herbs, greens, vegetables and fruits are perfectly dried.

Which is better to choose?

It is quite difficult to give a definite answer. It all depends on what goals and objectives a person sets for himself. The choice in this case depends on many parameters:

dimensions and layout of the kitchen; cost of the device; frequency of use; the importance of having an oven; preferred power type: gas, electricity or induction; overall dimensions and weight of the device; ease of installation; other factors.

Selection principles

KD can be in both electric and gas models. There are also combined versions on sale. Their equipment includes a hob (gas) and an oven (electric). In some modifications, gas burners are combined with electric ones.

  1. Burners. Gas burners can have different shapes and power. Today there are a lot of models with round burners. There are triangular and oval versions. Some appliances have burners with 2-3 lines of flame.
  2. Cooking area. There are two options for its manufacture: enameled and stainless steel. The price of the first option is small. It has a wide range of colors. Solid hygienic properties are noted. For your information! The second option is more expensive. But it is much easier to clean. Recently, a third option has become relevant - an aluminum alloy that has undergone special processing. It has powerful performance characteristics. It requires minimal care. And such surfaces are resistant to scratches and tarnishing.
  3. Gas control. This option or its analogue is an excellent protector against gas leaks. Principle: The gas is automatically shut off if the flame goes out unexpectedly.
  4. Presence of electric ignition. Its versions: mechanical and automatic. To start the first option, turn the power relay and press the ignition button. The second version starts immediately after turning this relay.
  5. Presence of a timer. Its variations: mechanical and electronic. The first one only signals the end of the specified time. The second program programs the operation of the oven and one burner, automatically turns the oven on or off at a given time.
  6. Oven volume. The more food you plan to cook, the larger the oven. Very large ovens have a maximum range of options. Such versions are preferred by particularly hospitable hostesses.
  7. Oven cleaning method. Modern technologies greatly simplify stove maintenance. Cleaning the oven is easier thanks to the non-stick enamel. It is resistant to various stains. The hydrolysis or pyrolytic method of cleansing is simply a lifesaver for all housewives. The essence of the first: a baking sheet is placed in the oven, water with a cleaning agent is poured into it, the oven heats up, all the dirt in tandem with the steam ends up in the pan. The essence of the second: the oven is brought to high temperatures, for example, 250 degrees. Under such conditions, all the dirt burns. To achieve maximum cleanliness, you need to wait until the oven has completely cooled down and wipe it with a damp paper cloth. Some ovens have built-in filters to absorb grease and odors.

What does combustion temperature depend on?

The flame temperature in a gas stove strongly depends on two factors:

  • chemical composition of the incoming gas mixture;
  • fuel supply intensity.

Dependence of temperature on fuel type

There are two types of gas used in everyday life: natural and liquefied. The gas itself is odorless and colorless, so for safety it is odorized. A special substance, ethanethiol (or ethyl mercaptan), is added to the gas mixture, which does not affect flammability, but has a sharp, specific odor. It is the smell of ethanethiol that people smell when a leak occurs.

Natural gas consists mainly of methane - about 97% of the total volume. The remaining 3% is represented by various mixtures, including ethyl mercaptan. It is natural gas that can reach temperatures of 1500 degrees.

Liquefied gas is used where it is not yet possible to install a gas pipeline. In this case, either a propane-butane mixture (65 to 35) or a butane-propane mixture (85 to 15) is poured into the cylinders under pressure. Such mixtures burn worse than methane, so the combustion temperature does not exceed 1000 degrees.

Due to the temperature difference, different equipment is used for each type of gas. Many manufacturers of gas stoves equip their models with special jets and gearboxes so that the stove can be easily converted from natural gas to liquefied gas. If you don’t use them and just connect the cylinders to the stove, it will begin to smoke heavily and constantly go out.

Attention!

Do not attempt to convert the stove to another type of gas yourself! Contact the gas service, specialists will help solve all your problems.

Influence of combustion intensity on flame temperature

Using rotary controls, you can fully open the tap or partially close it, thereby increasing or decreasing the volume of gas entering the burner. The larger the volume, the stronger the flame of the burner, and therefore the heat output.

How to determine the temperature in the oven of a gas stove without a thermometer and using numbers

Experienced cooks who have been preparing the same dishes for many years and using the same oven can easily determine the heating temperature, even without paying attention to the thermostat marks. It is enough to install the handle in the usual position and after a few minutes enjoy the result. But if the oven is new or the recipe requires precise adherence to the temperature regime, and the thermometer does not work or is missing altogether, then you will have to deal with the thermostat scale, which completely lacks any symbols.

Comparison of measurement scales

If you have a passport for the stove and the operating instructions, it will not be difficult to determine how many degrees in the oven of your gas stove at a certain position of the control knob. This data is available in the relevant documents. If we are talking about a stove made more than 20 years ago, the instructions for which were lost in the last century, you have to rely only on average indicators, as well as your own experience.

Results

When you are going to purchase this or that model, say Hans, check out the assortments and reputation of stores from your or the nearest city. Study reviews of both the store and the model. If there are few critical reviews of a model, it may be that people simply did not purchase the best product or were using it incorrectly. Here is a question for the retail outlet. Give preference to both the store and the product with the most positive reviews. Of course, visit several stores and check the stove in person.

What can be done

In small-sized kitchens, it is quite difficult to “outdo” the interior, so it is more logical to resort to the second method - independent thermal insulation. There are several materials suitable for this purpose:

  • Foil insulation;
  • drywall wrapped in foil;
  • the same foil + basalt cardboard;
  • sheets of fire-resistant glass.

Any of the listed products, provided they are secured between the device and furniture, can serve as an effective protective screen. The easiest way is to purchase a roll insulator with foil: it needs to be folded in half or three, adjusted to the dimensions of the adjacent wall of the cabinet/cabinet and securely secured with foil tape around the entire perimeter.

For the oven, it is optimal to use regular foil paired with basalt cardboard: the first is attached to the side of the appliance, the second - directly behind it. Fiberglass can be used as a fireproof layer if, for example, a sheet of aluminum is laid between equipment and furniture. Some users prefer to dismantle part of the countertop and the end sides of the set (directly adjacent to the stove) - non-combustible materials such as artificial stone or tempered glass are selected to replace them.

Before testing any of the above approaches, you need to carefully study the instructions - some manufacturers clearly state that thermal protection strips prevent normal cooling of the device case, and therefore are categorically not recommended for installation.

Popular manufacturing brands

When choosing a stove, you should give preference to trusted manufacturers who have proven their reliability:

  • Gefest . The line of the Belarusian brand is represented by a variety of models. The stoves are equipped with electric ignition, ensuring safety of use. Most models have dual oven lights, a timer and a grill.
  • Darina . Budget equipment that combines beautiful design and high quality. The model range is represented by units with excellent functionality. The hob can withstand temperatures up to 800 degrees. The grates are made of cast iron. There is a “small flame”, grill and other useful options.

Oven functions

If the oven does not have a “Grill” mode, then an equally tasty dish can be obtained using universal heating. When large pieces of meat or fish are baked, you need to control the process during cooking. The pieces should be watered with the released juice.

In addition to the classic method, you can bake dishes in the oven using an artificial shell, such as foil or a bag. The first material is used for cooking meat, fish, and vegetables. If foil is used, it is important to follow a simple rule: the shiny surface should be turned toward the dish, and the matte surface should be turned outward.

The bag is great for baking a dish along with a side dish, you just need to make holes in its walls in advance. This procedure allows you to cook food juicy and soft. You can cook porridge and soup in the oven, which gives the dish a wonderful taste.

Lighting the oven

A gas oven heats up quickly compared to an electric oven, which is necessary for quick cooking. The equipment is used to heat food even if the lights are turned off in the house.

How to light a gas oven? First you should check whether the equipment is connected to the gas system. It is also necessary to familiarize yourself with the images on the plate. You need to pull out the metal bottom. Inside there will be a burner with curved holes for the flame to escape. There are 1 or 2 holes for ignition. A match is brought to them, and at the same time the relay turns.

How to light a gas oven if it has an ignition button. The burner tap must be turned to set the required temperature. Then press the gas supply start button. And the fire is activated by another button, which is located on the side of the panel. If there is no gas for several seconds, then turn off the equipment and repeat the procedure.
